Who doesn’t love whipped cream? It’s creamy, fluffy, and perfect addition to every dessert.
The downside is, that stuff in a can is full of dairy, refined sugars, and artificial flavors. But don’t fear, because I’m going to show you a recipe for whipped cream that is super creamy, rich, and sweet, but has zero dairy or refined sugars!
What you’ll need:
- Coconut cream
- Vanilla extract
(measurements are in the recipe card below)
The coconut cream will be next to the coconut milk at the grocery store. If you only have a can of coconut milk in the house, you can stick in the in fridge overnight, and all the cream will rise to the top for you to scoop off.
I got the idea for this recipe after making my >> healthy hot chocolate.<< I used coconut cream in the hot chocolate to make it super thick and rich! Definitely check it out!
After making the hot chocolate, I still had quite a bit of coconut cream left over in the fridge that needed to be used (Coconut cream will only last a week in a Tupperware in the fridge). This whipped cream is the perfect solution, since it is so versatile.
Transfer your coconut cream into a bowl. If it is straight out of the can, it will be very lumpy/separated, so you may need to mash it down with a fork a bit before using a hand mixer*
Add your honey and vanilla. I put my honey in the microwave for about 10 seconds melt it down, so it would mix better.
And whip away! It will take about 3-4 minutes for it to get nice and whipped.*
*Since the coconut cream will take a good 3-4 minutes to whip, I would recommend using a stand mixer with the whisk attachment if you own one, even though I used a hand mixture.
Note: the texture of this whipped cream will be a bit different from dairy whipped cream. It won’t hold stiff peaks like cream would, but it will get thicker and more fluffy.
And you’re done! Now you have some sweet, rich, and creamy whipped cream that can be used for all sorts of things. It makes an amazing fruit dip- I seriously ate all these strawberries in this picture with it.
It can also be used for topping pancakes & waffles, an indulgent addition to your morning oatmeal, a sweet topping for your coffee or hot chocolate, etc. The list goes on and on!
Try this dairy alternative out and let me know what you think!
- 1 cup of coconut cream
- 2 Tbs of honey (warmed in the microwave for 10 seconds)
- 1 tsp of vanilla extract
- Put all three ingredients in a stand mixer and mix on high with a whisk attachment for 3-4 minutes.
- Is best served immediately.
- This whipped cream will keep in the fridge in a sealed container for 1 week, but will need to be re-whipped a bit before serving.
